Kelsey no longer stresses about food and has finally found consistency with balanced eating.

“I just feel so much better. I really feel like I am at this point in my life, the healthiest that I've ever been. And I used to define health by the number on the scale or how I looked, my weight, and that is not how I define it anymore at all.

It's — do I have the mental clarity? Do I have the energy to show up in the best way that I can every single day? Can I fulfill the goals that I want to have every single day? Can I work towards creating a better world for myself and my friends and my family and for everybody?

And I feel like I am so much more in tune with what I need, what I need to nourish myself both externally, how does my body look and feel, but also like internally of giving myself the time to really recharge and show up in a way in the world that I've always wanted to show up, but I didn't realize that I could achieve that by just looking inside of myself and being in tune with myself.

So much has changed as far as how I view my health, how I want to take care of myself. It's much more holistic. It was so much more on external factors and now looking at myself as a whole human being, my health as both physical, mental, emotional, spiritual, all of it. And that's something I've never done before with myself or my health.”

Mara learned how she could practice balance even though she has some restrictions due to IBS.

"I struggled from IBS, so one of the things that appealed to me about the Mindful Nutrition Method™ is that I have these tools to be able to take care of myself.

I think my experience before was filled with the idea of failure and that I had very little control over things. And what I’ve learned with the Method is that there is no one way of doing this journey, and that it’s important to be curious and understand, what things work for you.

I understand that there are foods that are going to be not so great for me (due to IBS), and then foods that will help sort of sustain this good feeling gut, and that's been an ongoing issue for years for me.

I've done a number of coaching calls with Erica and she's been great. Sometimes we talk about food, sometimes we talk about the other things that are going on in my life that are affecting the ability to make those decisions, and how to plan for the unpredictable in some respects. I have enjoyed the additional support.

One of the things that I've talked to Erica about a lot is the idea of finding a way to make a life with IBS enjoyable for me.  There are foods that I love that I've had a really hard time giving up (for IBS). I'm a huge fun of bread, so that has been like a big challenge for me through this whole thing, even though I know that it isn't going to work out well (for my digestive system.) Erica helped me realize I can find alternatives that I enjoy just as much. I've started making sourdough breads, which seems to be much easier for me to digest.

That is something I would never have done six months ago. Just the idea of that requires a lot of commitment and prep work — it requires all these things that I didn't think I was willing to do. And it's been through this process that I've understood that this is going to be the good outcome for me and it's worth putting in the time in advance to have that outcome. So that's been a complete shift in the way that I've thought about food and life.

It’s worth taking the time to seek out an answer for yourself and finding a way of doing things that work for you. This has just been such a great opportunity to learn a little bit about me and to learn a little bit about the things that work to help my life work better. Not just with food, but with all kinds of things. And so if you like me, have spent all of your life, adult life, trying to find a box to fit in, this is definitely not the box, but I think that’s why it works.

This has been such a light in what has been a weirdly dark time.

Elissa overcame her disordered eating habits.

“Before deciding to sign up for coaching, my biggest skepticism or hesitation was that I’d be pressured into making unnecessary or arbitrary changes since I was recovering from an eating disorder. This was my first time seeking treatment after many years and while I started this process voluntarily, I was still highly skeptical after my previous interviews with other nutritionists.

Now that I’ve had a chance to experience coaching, my perception has done a 180. Erica has been able to meet me where I am. She’s been able to balance providing me with fact-based, logical and clear explanations for recommendations with the support and understanding of what I was struggling with.

Her optimism, positive attitude, and blameless approach have allowed me to learn without feeling the need to rebel, therefore inspiring more action on my part.

One specific takeaway that’s impacted my life is that eating should be viewed on a scale from eating for experience to eating for health. The goal isn’t to be on one side all the time and where you fall on that scale varies each day or each meal.

The impact that coaching will have on my life in the next 12 months is monumental. As someone recovering from disordered eating habits and ridiculously high standards for myself, I’m now able to enjoy food I used to be terrified of and enjoy experiences without thinking I need to push my body or “make up for it” after. It’s still hard and takes conscious effort, but it’s happening.

If you’re considering coaching, you should 100% try it! Erica is adaptable, encouraging, filled with knowledge that she can convey in an approachable way. The knowledge that I’ve learned and our touch bases have kept me grounded in my recovery and it’s worth taking the first step.

Erica has made a huge difference in my life at a time when I was emotionally raw, mentally exhausted and struggling. She got me to a place where I could stop ruminating about food and judging myself too harshly. She’s been a support system and teacher that I’m extremely grateful for.”

Holly learned her food sensitivities and found her balanced weight.

“I wanted to clearly identify my food sensitivities to strengthen my immune system and lose a bit of weight healthily. We worked together to create a way to use the framework that allowed me to easily determine where my food intolerances were stemming from. The plan was also tailored to my individual needs to promote healthy weight loss through a lifestyle approach rather than a diet.

After two months of working on this with Erica, I no longer had any sensitivity outbreaks and my clothes were already starting to fit better from weight loss!”

Libby reduced her cholesterol medication by half through a personalized approach.

“After a recent diagnosis of a heart blockage through a heart catheter, I signed up for Wellness Coaching with Erica to reduce my cholesterol levels and hopefully lose a bit of weight as well. We discussed specific diet and lifestyle changes I could make in order to do just that without making it feel like I was on a diet or temporary plan.

After just 3 months of working together, my cholesterol levels were so much better that my doctor reduced my medication by half and I have also lost about 6 pounds. I’m soo happy!”

Vicky learned how to nourish her body to support her PCOS.

“Before working with Erica (NS Coach and Registered Dietitian), cost and time were my biggest concerns. Yet I soon realized that if I wanted to make change happen to benefit my life, I have to make the time, put in the effort and make the investment in my health. The cost was absolutely worth it!

I have felt so much better physically, mentally and emotionally since making the changes Erica suggested.

My hormones have also felt more balanced and in control thanks to this coaching! The education, the progress, the growth, the support, and the changes truly made a huge difference in my body and my mind. I have thoroughly enjoyed this journey with wellness coaching.

I am so impressed with my coach Erica. She went above and beyond for me. She was so educated, especially for my special medical needs (PCOS). She was also so friendly, encouraging and supportive. I look forward to every call I have with her! All the plans, articles and suggestions Erica made for me and gave me have helped me so much. I’ve had so much fun learning about how to take care of myself and feel so much better because of it!”
